Succulent Spring Salads

Esalen-esque Kale SaladWhat better way to celebrate the arrival of spring than with a delicious salad? Every Monday I look forward to eating a beautiful salad for lunch from The Mixing Bowl. The Mixing Bowl is across from our Oakland studio on Telegraph Avenue. They offer take-out on a daily basis as well as catering services for events of all kinds.

Grace, the owner, was nice enough to share one of my favorite salad recipes for yummy spring salads.

Lemon Flax Dressing

Makes 1 quart

  • 1.5 cup      lemon juice
  • 3/4 cup      vegetable oil
  • 3/4 cup      flax oil
  • 3/4 cup tamari
  • 1/2 cup   nutritional yeast
  • 5 cloves garlic

Put this all in the Vitamix until smooth. Store in the fridge and use it all week!
