Fall reminds me of how delicious and beautiful beets can make a simple meal. Beets are so good and good for you! An ancient, prehistoric food naturally found along the coastlines of North Africa, Asia and Europe, beets were originally harvested for their greens but are now known more for their root.
The benefits of beets range from detoxification support and warding off cancer to lowering blood pressure and fighting inflammation. And it’s not just the beetroot but also the greens that pack a punch. Beet greens contain important nutrients such as phosphorus, zinc, fiber, vitamin B6, magnesium, potassium, copper, and manganese as well as significant amounts of vitamin A, vitamin C, calcium and iron.
Here are a few quick favorites to inspire some beet in your life!
SEXY FUCHSIA SIDE DISH: Roast beets and toss with creme fraiche or with apple cider vinegar (vegan). Adds so much color to any main dish.
SASS UP A SANDWICH: Roast whole beet, remove the skin, peel and slice onto your favorite sandwich.
HOMEMADE CHIPS: Use a mandolin to slice beets thin, then roast.
BURGERS: Finely chopped beet can be a yummy surprise in a to a meaty burger like lamb. Or use beet in a non-meat bean burger.
GREEN EGGS & TOAST (or ham;): Don’t throw away the greens on top of your beets. Saute them and serve with eggs and toast! They can be a little bitter so add balsamic vinegar, your favorite cheese, and/or caramelized onions.
ORANGES & BASIL: Wrap wedged beets in tin foil and roast at 400 degrees for about 45 minutes. Once out of the oven, dress with balsamic vinegar, oranges, and basil.
SWEET TREAT: Roast beets with yams, apples, and cinnamon.
