Fresh Summer Salads

Summer in San Francisco has arrived–warm weather, sunshine, and a plethora of fresh fruits and veggies at the farmer’s market.  Fresh and fast with no cooking involved, there’s a reason these salads are some of my favorites. The fresher the fruit and veggies the better these salads are.  Perfect for lunch on-the-go or a summer supper. Beat the heat with these refreshing, easy, and delicious summer salads. Enjoy!

Watermelon & Feta

Fresh watermelon

toasted sunflower seeds

fresh basil

red onion

feta cheese

Chop, toss, and eat.

 

 

Corn Salad

1 cup fresh corn chopped off the cob

½ pound french lentils

½ pound Fregula

chopped scallions

1 teaspoon extra virgin olive oil

Maldon or other flaky sea salt

1 squeeze of lemon

lemon zest

Black pepper and salt to taste

Dilly Orzo

¼ cup fresh chopped Dill

red onion

1 can chickpeas

seeded and then chopped cucumber

cooked orzo (or couscous or quinoa)
